NO.1睢宁水粉皮(腊皮)
睢宁水粉皮,也叫腊皮,是徐州一道名菜,起源于宋代,由农家百姓创造产生。制作工艺考究,原料主要来自绿豆、地瓜或土豆中的淀粉。睢宁水粉皮以做成凉菜为主,配上少许菠菜叶,辅以红辣椒丝、蒜泥、食醋、香油等,独具佳肴特色。冬季热炒或做汤,美味令人叫绝。目前,睢宁水粉皮由小群体加工走向大规模生产,其中以睢宁县沙集镇最为出名。

睢宁金丝搅瓜这是睢宁的一道特产奇菜——金丝搅瓜,是生瓜取丝,天生自然,不是用刀切的,此菜确有“天然粉丝”的美称。外地朋友惊叹不已。金丝搅瓜瓜味清、香、脆、微甜,不用蒸煮即可生瓜取丝,深受人们的欢迎。
生瓜食用时轻拍瓜的周围,切开瓜后,用筷子或叉子扒动瓜内已分离的瓜条,就能出现像粉丝一样的瓜丝。如需熟用,开水焯出、重敲瓜壳横切取籽后,用筷子一搅,金丝自开,冷水投过,加上作料,即可佐餐下酒。也可以炒、熬、做馅等。无论如何烹制皆爽脆无比,被誉为植物海蛰。金丝搅瓜耐贮藏,7~8个月不失色、不变质,堪称天然蔬菜罐头。
Suining has a characteristics of local dishes named JINSIJIAOGUA. It take out silk from raw melon, and very natural .This dish also named "natural silknoodles",other places friends was amazing about it.JINSIJIAOGUA taste clear,fragrant,crisp and haut,was popular with people.

NO.2睢宁盐豆
每年立冬前后,睢宁城乡的主妇们开始忙活“下盐豆”。她们挑选上等黄豆为原料,放在锅里煮熟,趁热装入蒲包,放在暖热的地方,用干软草盖上、捂严实,使其发酵,焐到扯黏丝程度取出,拌上红辣椒酱(旧时农家是用拐磨将干红辣椒配上水磨成辣椒酱;现如今,城里人直接到加工椒酱的地方用机器加工好辣椒酱),加上盐、大葱、生姜等调料,再配上适量的鲜红萝卜,用少许凉开水搅拌而成,拌好后即食,叫“鲜盐豆”,晒干后再食用,叫“干盐豆”。
尤其以鸡蛋与之搭配,即是苏北古城徐州特有的小菜,更是人间之极品啊!
睢宁老盐豆具有其他菜肴无法比拟的优点。它风味独特,易保管,好收藏,一年四季都能吃,不变质。特别是刚拌好的“鲜盐豆”,红通通的,辣乎乎的,用新烙出的煎饼一卷,满口生津,令人食欲大振。
Every year around Beginning of Winter, peasant women in Suining are busy making Yandou. As raw material,first-class soya beans are cooked thoroughly in pot, put in cattail bag with heat. Then preserve soya beans in warm place, covered with cured hay to ferment them. Beans are taken out when they are stickty,mixed
withpepper jam and somecondiment like salts,green Chinese onion, ginger. Finally, add some fresh radishes and a little water to beans, fresh Yandou are made out. NO.3王集烧鸡 王集烧鸡,在300多年前的康熙年间已闻名苏北,历经沧桑,汤味不改,延续至今。主料烧鸡选用地方草鸡,辅以20余种名贵中药,以传统技术为基础,结合现代创新工艺精制而成。香中隐甜,咸淡宜口,色佳味美,嫩酥俱全。在江苏享有较高声誉。
Wangji roast chicken has already been famous 300 since years ago in the north of Jiangsu Province. Local chicken are cooked by a new kind of skill which based on traditional cook, added in more than 20 kinds of distinguished traditional Chinese medicine.
NO.5沙集卷煎
卷煎的制作方法。工艺流程为:精选原料、分割处理、添加配料、裹加外皮、高压熟处理、冷却、杀菌最后真空包装,通过人工精选肥肉、瘦肉切成细丝状加上葱姜、八角、花椒、精盐、味精,再配上绿豆粉、胡萝卜丝、淀粉等配料调成糊状馅,再用粉皮裹成卷状,然后高压蒸熟,冷却杀菌处理后真空包装。
通过这种方法制作出的卷煎,具有味风独特、香味浓郁、口感细腻、绵软营养丰富等特点
Then how to make this deliciousfood:select the meat carefully and cut into filamentous,add in green onion,staranise,pepper,refined salt and ajinomoto,covered with green gram starch,carrot silk and amylum,make it into pasty,use FENPI to wrapped it into shapping.And the last it taste unique,fine and smooth.
NO.6睢宁大酥饼
睢宁的大酥饼要数邱集、高作、沙集的最好吃.大酥饼外皮主要成分是猪油和面粉。馅有豆沙的、椒盐的、枣泥的,等等,要用油炸过才能吃。

Qiuji,Gaozuo and Shaji.Lard and flour covered with it.And the stuffing iavarious,such as sweetened beanpaste,spiced, jujube paste and so on .
NO.7黄皮西瓜 睢宁黄皮西瓜,主产区在西部王集镇,稳定区域面积1万余亩。目前推广的优质品种为宝冠黄皮西瓜,上个世纪90年代在美国园艺新品种大赛中获优胜奖。睢宁黄皮西瓜果皮金黄色,肉质细爽多汁,种子小而少,果皮薄而硬,耐储运,具有抗病力强,结果早、成熟早的特点。

NO.8下邳贡菜
下邳贡菜,又称苔干,是一种以取食地上苔茎为主的绿色食品。质地脆嫩,色绿味甘,清朝乾隆年间被定为“贡菜”。目前睢宁古邳有千亩苔干基地,年亩产
干苔干100公斤左右,在港、澳、台、新加坡极为走俏。

NO.9王集香肠
睢宁县王集香肠相传起源于清朝。康熙年间,公元1666年,身为御膳房厨师王氏先人,为调整康熙帝的饮食结构,选择一种精瘦猪肉加多种调料装入猪小肠蒸熟,经晾干切片献给康熙皇帝。康熙用后感到特香不腻,味道纯美,遂赐“香肠”之菜名并深受好评。至清朝末期,八国联军进京,慈禧太后逃往热河,王氏家庭流落苏北大王集,王氏香肠方得代代相传。
睢宁王集香肠的食用方法简单方便,蒸、炒均可,但最为传统的食用方法还是蒸后切成片,风味鲜明

NO.10睢宁三水梨
三水梨果形圆、果皮红、果肉细、石细胞极少、可溶形固形物含量高。睢宁是梨栽培最适区之一,历史上“睢宁青梨”、“水壶子”等地方名品享誉黄河故道地区。直至今天,睢宁仍有成片100年树龄以上的老梨树处于盛果期,堪称全省一绝、全国少有。

煎饼是苏北的睢宁、邳州、新沂及山东一些地区的主食,是一般家庭每餐必备的干粮。在旧时农村,女孩长到十三,四岁,母亲就开始严格地教其学习烙煎饼。烙煎饼曾是每个家庭主妇的必修课
菜煎饼是睢宁人饭菜合一的经济食品,是一种聪明的做法,也是一种街头的平民小吃。在睢宁的街头、巷口,寻着随风飘来的阵阵菜香,看到三五人围着一个正在忙碌的大嫂,无疑,那肯定是个菜煎饼摊儿。
Jianbing is thie main food in the north of Jiangsu,and the field rations in radinaryfamily.In old country,when girls growed in thirteen years old,her mother will teach she about how to make Jianbing.
